BoTree Kampot Salted Green Pepper Berries, 100g

$7.00

BoTree Kampot Salted Green Pepper berries are preserved by mixing them with Kampot Fleur de Sel, which then sucks in moisture from the air creating a natural preservative. The taste is salty and piquant; you can use them in numerous ways to perk up your food: in marinades for meat; in most eggs dishes; fried rice or risotto; salads… the list is exhaustive and open to experimentation. We love to put them in a bowl and snack on them with a beer or glass of wine!

When people come to Kampot and taste the signature dish of the province, Kampot Pepper Crab, made with whole spikes of freshly plucked Kampot Pepper, they always come to ask how they can get fresh green pepper to take home with them. Unfortunately, like a lettuce leaf, pepper berries do not remain good for more than a few days without preserving in some way or other. So, now we have come up with a novel alternative to drying... and it is amazing!

BoTree Kampot Salted Green Pepper berries are preserved by mixing them with Kampot Fleur de Sel, which then sucks in moisture from the air creating a natural preservative. The taste is salty and piquant; you can use them in numerous ways to perk up your food: in marinades for meat; in most eggs dishes; fried rice or risotto; salads... the list is exhaustive and open to experimentation. The berries do not keep their fresh green colour for long - perhaps a month in the vacuum pack or 1 week after opening if kept in the fridge, however they are delicious long after they have turned black in the air and have a usable life of around a year. To keep green for longer, put them in the freezer unopened until you want to use them.

Great Taste 2026 : 2 Star Award: Outstanding

BoTree Kampot Salted Green Pepper has been awarded 2 gold stars at the 2026 Guild of Fine Food’s Great Taste Awards, the fine and speciality food world’s equivalent of the “Oscars”. Here is what the Judges had to say:

  • Good, evenly sized peppers with a dark, almost chocolate colour. The smell hints at May blossom and light fruitiness. The berries are pleasingly fresh with a bite rather than crunch. Once crushed, floral notes erupt and the juiciness is clear. A hot pepper with fruity sweetness to compensate and balance.
  • These peppercorns have a soft, enjoyable pop as they release classic peppery taste and flavour—fruity and hot. They have been well handled to allow their fruity flavour and heat to shine and would add great flavour to any dish.
  • The berries are well presented and consistent in size. A bright flavour, fairly perfumed, with appropriate salinity from the fleur de sel—fruity, juicy and full flavoured. These pepper berries have been handled with care and skill, which shows in the result.
