BoTree Kampot Salted Fresh Green Pepper berries are made by mixing young green berries straight from the vine with Kampot Fleur de Sel, which then sucks in moisture from the air creating a natural preservative. The taste is salty and piquant; you can use them in numerous ways to perk up your food: in marinades for meat; in most eggs dishes; fried rice or risotto; salads… the list is exhaustive and open to experimentation. We love to put them in a bowl and snack on them with a beer or glass of wine!
When people come to Kampot and taste the signature dish of the province, Kampot Pepper Crab, made with whole spikes of freshly plucked Kampot Pepper, they always come to ask how they can get fresh green pepper to take home with them. Unfortunately, like a lettuce leaf, pepper berries do not remain good for more than a few days without preserving in some way or other. So, now we have come up with a novel alternative to drying… and it is amazing!

The berries do not keep their fresh green colour for long – perhaps a month in the vacuum pack or 1 week after opening if kept in the fridge, however they are delicious long after they have turned black in the air and have a usable life of around a year. To keep green for longer, put them in the freezer unopened until you want to use them.
BoTree Kampot Salted Green Pepper was awarded a gold star at the Guild of Fine Food’s Great Taste Awards, the fine and speciality food world’s equivalent of the “Oscars”, in 2020. Here is what the Judges had to say:
- “Consistently sized little berries. The aroma isn’t particularly inviting, a bit briny. The taste however is remarkable. Bright with fresh heat, really spicy and peppery. Good texture, firm but not gritty. These would bring a real lift to whatever you added them to – we are now craving a steak au poivre made with these!”
- “Great peppery heat that grows to a most satisfying level. Sparkling and full of flavour.”
